Tim MatthewsTim Matthews grew up in a small coal mining village in Yorkshire, England. Tim took his apprenticeship and attended Thomas Danby College in Leeds in the north of England. At the age of 18, he had his chef’s papers. He has worked in Savoy Hotel in London, Hotel kempinski in Berlin, Loews Hotel in France and Sheraton Hotel in Stockholm, Sweden. Tim came to Thunder Bay in 1980 and worked at the Airlane Hotel as executive Chef. In 1986 he joined the hospitality team at Confederation College and coordinated the Culinary Management Program.
In his career, he has won 13 gold medals, a number of challenge trophies, and several awards including Chef of the Year from the Association of Chef de Cuisine, outstanding service and faculty Award for Excellence in teaching from Confederation College, NISOD Teaching Excellence Award from the University of Texas. Tim had a weekly show on CBC radio for 21 years and has written over 500 articles on food preparation and cooking.
Tim will share some of his best tips for adapting menus for a health conscious customer. In this presentation Tim will also share some invaluable pointers of the trade to help make small changes to food preparation and presentation that will enhance your menu offering to your guest. We at NOTO had the opportunity to see Tim in action, he is absolutely brilliant and super entertaining.
